Dr. Lyda Garcia with the Department of Animal Sciences, College of Food, Agricultural, and Environmental Sciences at The Ohio State University has been appointed to serve on the Heritable Genetic Modification in Food Animals Committee, an ad hoc committee within the National Academy of Sciences.

When the COVID-19 outbreak hit Ohio, Lyda Garcia’s phone started to ring. Many of her contacts from Ohio’s meat-processing industry wanted to know what to do.

“I would share ideas, and I would challenge them to start thinking ahead of the curve, to be proactive,” said Garcia, assistant professor of meat science and meat extension specialist in fresh meat processing in the College of Food, Agricultural and Environmental Services (CFAES).

Dr. Lyda G. Garcia, assistant professor of Meat Science in the Department of Animal Sciences, provided a Mini-Beef 509 class for the 2018 Ohio Cattlemen’s Foundation Young Cattlemen’s Conference (YCC). Garcia provided hands-on learning on how meat is graded, fabrication of wholesale and retail cuts, and other issues that can affect beef quality and pricing. Participants also viewed champion carcasses from the 2018 Ohio State Fair.

Dr. Lyda Garcia, assistant professor of Meat Science, and Gregg Fogle, manager – animal herd, received the Honorary State FFA Degree during the 90th Ohio FFA State Convention. The purpose of the degree program is to recognize individuals who have rendered outstanding service to the agricultural education-FFA program. Tracy Dendinger, Ohio FFA state supervisor for Districts 2, 5, 6, and 9, nominated both Dr. Garcia and Mr. Fogle.

On Friday, April 6, the Ohio State University Meat Judging Team hosted the first day of the Southeastern Intercollegiate Meats Judging Contest. Nine universities, with 75 total judgers participating as eighteen teams, spent day one at Ohio State and day two at the University of Kentucky.

Last week, The Ohio State University Meat Laboratory harvested and processed the Ohio State Fair Champion and Reserve Champion lambs for each of the Junior Fair breed winners. The Open Class Champion and Reserve Champion were also harvested and processed. Once the animal carcasses were processed, Department of Animal Sciences’ faculty members Dr. Steve Moeller and Dr. Lyda Garcia evaluated the carcasses based on lean quantity and quality following U.S.

This week, a newly formed Ohio-based company had two animals harvested and processed in The Ohio State University Meat Laboratory for photographs of meat cuts conforming to the Institutional Meat Purchase Specifications (IMPS). The IMPS is the standard used by hotels, restaurants, and other food service distributors when purchasing meat cuts. The work was being conducted by Ron Cramer, Manager of the Meat Laboratory, and Dr. Lyda Garcia, an Assistant Professor and Meat Scientist in the Department of Animal Sciences.

News article: Iowa State University Invitational

The 2016 Ohio State University Meats Judging Team in the Department of Animal Sciences returned form its second meat judging contest, Iowa State University Invitational, held in Ames, IA. The Fightin' Buckeyes finished 5th out of ten total teams.

The team placed third in beef grading and fourth in specifications, and it placed fifth in beef judging, overall beef, pork judging, total placing, and total reasons.

Zachary Temple, a junior in Animal Sciences (minoring in Meat Science) from Mansfield, OH, finished 10th overall and 3rd overall in specifications.

News article: First Annual Meat Judging Coaches Clinic

On January 30, 2016, The Ohio State University’s Department of Animal Sciences and Ohio Future Farmers of America (FFA) hosted 30 participants in the first Meat Judging Coaches Clinic in the Animal Science building. The clinic targeted anyone involved in coaching, or interested in coaching, a meat judging team. Participants learned and reviewed the principles of grading and evaluating carcasses and wholesale cuts originating from beef, pork, and lamb. In addition, anatomy and muscle myology was covered for retail identification. The program was initiated by Dr. Lyda G.

The 2016 Ohio State University Meats Judging Team in the Department of Animal Sciences began a new year of competition. The 2016 meats judging team opened their season with their first competition, held on January 17th, placing 10th (out of 13) at the National Western contest in Denver, Colorado. This is the first time the Fightin’ Buckeyes competed in the National Western. The contest is held at JBS beef packing in Greely, CO, and a banquet is held at the National Western Stockshow in Denver, CO.

Event: Buckeye Classic Meat Judging Contest: Student

Students can judge individually or as a team of four (clubs and organizations welcome) 6-7pm

Dinner will follow directly afterward.

This event is free of charge and will be held in 117 Animal Science. Awards will be announced Saturday, November 7 at 1pm during the Dept. of Animal Science tailgate event.

Event: Buckeye Classic Meat Judging Contest

Step back in time, dust off your judging skills, and enjoy another round of judging meat. And, join the faculty and staff in sending off the 2015 Fightin' Buckeye Meats Judging team to the International contest to compete in their last contest of the year.

The event will run from 9:00 a.m. to 11:30 a.m. Recognition and awards will follow the contest, and a barbecue lunch will be provided. Stick around to tailgate with current faculty and staff!  Read more.

The Department of Animal Sciences recently hosted a group of students from the Louis Stokes Alliances for Minority Participation (LSAMP) program. Dr. Lyda Garcia, assistant professor of meat science, addressed the group and got them involved in sausage making in the meat lab of the Animal Science Building. "The LSAMP program assists universities and colleges in diversifying the science, technology, engineering and mathematics (STEM) workforce through their efforts at significantly increasing the numbers of students successfully completing degree programs in STEM disciplines.
