Course Spotlight for Autumn 2023

Why did the chicken cross the road? To enroll in ANIMSCI 3306.

Students interested in learning about poultry and their products (meat and eggs) should consider taking ANIMSCI 3306 - Poultry Selection and Evaluation course for autumn semester 2023. This course focuses on evaluating and ranking standard breeds of chickens; evaluating and  grading poultry meat and egg products; and live poultry handling techniques. Animal Sciences 3306 has a required lecture and lab, taught by Dr. Michael Cressman. The lecture is online, and the lab is on Wednesdays and Fridays from 12:45-2:05 pm.

 

Meat Science 4510

Bacon! Need we say more? Bacon and other processed meats are meats that are preserved by smoking or salting, curing, or adding chemical Meat Science 4510 preservatives. Students can learn how this is accomplished by enrolling in MEATSCI 4510 - Processed Meats for autumn semester 2023. The course explores fundamental changes in soft animal tissues from the application of non-meat ingredients and a variety of cooking methods. Meat Science 4510 has a required lecture and lab, taught by Drs. Ben Bohrer and Lynn Knipe. The lecture is in person on Tuesdays and Thursdays from 9:10-10:05 am and the lab is in person on Wednesdays from 10:10 am-12:15 pm.
