  2. Dr. Eric England Uses Chemistry Background to Improve Meat Quality

    Dr. Eric England is combining his background in chemistry with his research in meat science to improve meat quality. He is focused on understanding how biochemical mechanisms control the transformation of muscle and the resulting changes in fresh and processed meat quality.

  3. From Farm Gate to Dinner Plate Mini 509 Workshop

    The Department of Animal Sciences and Ohio 4-H will host a two Saturday workshop that explores the impact of livestock practices on meat quality and consumer satisfaction. The event will be held February 17th and 24th from 8:30am-4:30pm in the Animal Science Building (2029 Fyffe Court, Columbus, OH 43210). The workshops are targeted towards youth (14-18 years old) and agriscience teachers. The registration deadline is December 15 and is limited to 40 seats on a first-come basis.   4. Introductory Animal Sciences Laboratory Course Makes the Theoretical Relatable

    The Introductory Animal Sciences courses are the first exposure many Animal Sciences students have to the scientific or research principles of their major. While the quantity of unfamiliar information in the lecture course (ANIMSCI 2200.01) may seem overwhelming, the laboratory course (ANIMSCI 2200.02) helps to provide hands-on experience and practice making the introductory theoretical information more relatable.

  6. Processed Meats Product Show

    The Processed Meats (MEATSCI 4510) class will present its final products on Wednesday, December 6, from 9:10am-11:15am in 117 Animal Science Building, to visitors who want to taste and judge the students' creations. Individuals or teams will produce a variety of meat products, including proper labeling, a Hazard Analysis and Critical Control Points (HACCP) safety plan, and a marketing and advertising plan. The course is taught by Dr. Macdonald Wick, Associate Professor.

  7. Little International 2017

    The 103rd Annual Saddle and Sirloin Little International will be held November 4, 2017. Little International events consist of showmanship competitions in five livestock species (goats have been added this year), and a Ham and Corned Beef Cure contest. Students in the College of Food, Agricultural, and Environmental Sciences are encouraged to participate in the events and share this experience. Little I is open to family and friends of students, faculty, and industry members.
