Fresh pork, beef, and lamb quality attributes that define value, consumer acceptance, and ultimately demand for meat products are the focus of past and current research efforts. Outreach efforts evolve with industry changes and are currently focused a great deal toward animal care and welfare with contributions to welfare assessment processes and auditing of the swine industry from the farm through the packing plant. In addition, Dr. Moeller maintains an active role in the Ohio swine industry, addressing industry issues, offering symposia and workshops, and conducting research focused on current concerns and needs. Dr. Moeller currently teaches or co-teaches courses in animal handling, human and animal interactions, swine production, branded meat products, two study abroad opportunities within the university.
